Breakfasts
Fruity Yoghurt
(Serves 1)
100g mixed berries such as raspberries, blackberries, bluberries, redcurrants (fresh or frozen)
150g natural, unsweetened soya yoghurt (I like Alpro organic)
1 apple - grated
2 tbsps of mixed seeds such as pumpkin seeds, sunflower seeds, linseeds/flaxseeds.
Stir mixed berries and grated apple into the soya yogurt. Top with a handful of seeds and enjoy - simple!
Tip: If you have the time, it's good to grind the seeds in a food processor or coffee bean grinder to help your body access their nutrients more effectively.
Eggs
Versatile and full of protein and nutrients – just make sure they are free range & organic. Try…
* Poached egg with some wilted spinach, top with plenty of ground black pepper.
* Frittata or omelette with mushrooms, peppers, cougettes or any leftover veg in the fridge.
* Scrambled egg served with a slice of rye bread, top with organic smoked salmon and watercress.
Cooked Breakfast
Traditional ‘Full English Breakfasts’ are not all bad. Grill organic bacon rashers or organic sausages and serve with scrambled or poached organic eggs, grilled tomatoes and mushrooms. Even organic pork is often still preserved with undesirable additives, so keep this as an occsional treat. Alternatively, opt for veggie sausages such as Cauldron Linconshire or Cumberland varieties.
Sardines or Kippers
You can buy fresh or tinned. Serve with a slice of rye, or wholemeal toast and grilled tomatoes.
Super Fast Breakfast Ideas
If it’s really one of those mornings when you just HAVE to get up and go, here are some ideas:
* Have a small (150g) pot of soya yoghurt with some blueberries mixed in.
* Keep a tub of BioCare/Patrick Holford’s “Get up & Go” breakfast powder at work with a few of the mini cartons of soya or rice milk. Blend to desired consistency.
* Keep a jar of almond, hazelnut or cashew butter at work with a few packs of oatcakes and an apple.
* Have piece of low GL fruit and a handful of unroasted nuts such as almonds, walnuts or brazils.
Omega Seed Mix
Seeds are fantastically healthy, providing protein, essential fats, minerals, vitamin E and fibre. Grind together sunflower, sesame, flax and pumpkin seeds in a coffee grinder and keep stored in an airtight container in the fridge. Sprinkle this mix on your cereals, in smoothies and on soups and salads. Ensure you grind up seeds regularly and keep them for no longer than a week.
